Ice cream is art and science. But unique ice cream flavors at Honeycomb Creamery reflect more than that. Pastry Chef Kristen will talk about New England ingredients and seasonal produce that turn ordinary flavors to extraordinary sensations. We’ll start with the basics of ice cream and how to turn your imagination to make creative ice cream. While we churn ice cream, we will talk about how to tackle sauces and toppings.



Kristen Rummel and ice cream first met only a few years ago at Oleana, where she tasted real corn ice cream made in a small batch. She started replicating at home with a small ice cream maker someone gave her for her wedding. Kristen spends a lot of her time cooking, baking and churning to create the beautiful, unique flavors for all of the ice creams and waffle cones. Through her studies at Cambridge School of Culinary Arts and her work as kitchen manager at Union Square Donuts, she has cultivated a love for unique, inspiring and delicious food. She continues to make all ice cream at Honeycomb Creamery completely from scratch and source ingredients locally.

Manya Alvarado joined the opening team at Alden & Harlow in Cambridge in 2014. She spent two years as a line cook, perfecting her approach to executing Chef/Owner Michael Scelfo’s vegetable-forward menu. She was promoted to Sous Chef one and a half years later, a position she carried through to support the opening of Scelfo’s sophomore restaurant, Waypoint, in 2016. She brought this passion to her new position as Chef de Cuisine of Longfellow in spring 2018.

Dan Pontius joined the team at Alden & Harlow under then Bar Director, Seth Freidus. Infusions, vinegars, syrups and bitters were all being created in house, but with the added layer of incorporating hyper seasonal vegetables to create more interesting and savory cocktails. Today, Dan oversees the cocktail program at The Longfellow Bar at Alden & Harlow, a neighborhood bar and restaurant located in the historic Café Algiers space directly above Michael Scelfo’s flagship restaurant in Harvard Square.

After graduating Johnson and Wales University summa cum laude in 2012 in Miami, Florida, Josh Elliott joined the acclaimed Pubbelly Restaurant Group, taking on the Sous Chef position at PB Steak before moving to the flagship Pubbelly. He then began the opening process as the Executive Chef of the Hilton Cabana and its signature restaurant L’echon Brasserie. From 2015 to 2017 Elliott served as CDC at the iconic Raleigh Hotel. Elliott was thrilled to head north in 2018 to work with James Beard award-winning chefs Ken Oringer and Jamie Bissonnette. At Toro, in Boston’s South End, he currently leads the team as the Executive Chef.

As the new Executive Chef of Parsnip, Chef Salazar is re-imagining the menu to offer New American, seasonally inspired, and ingredient-driven cuisine in the restaurant’s contemporary and relaxed setting. Embracing his Filipino heritage, Chef Salazar was inspired from a young age by his hardworking mother who made delicious, home-cooked meals for her family of six every evening, as well as by the TV shows of Julia Child, Martin Yan, and Bobby Flay.

Dave Punch began his culinary path at a young age making pancakes in home-ec class at Natick High School. He then went on to ski and cook in Vermont, which was the catalyst for his love of the restaurant world. Since then, he has never looked back. Spending the early days of his cooking career in Boston and Cambridge at the Nightingale, Upstairs on the Square and Rendezvous. Dave then had the fortune of running Ten Tables Jamaica Plain as executive chef. Three years later he became an owner himself, opening Ten Tables Cambridge. All of these experiences have given Dave the opportunity to hone his skills, crafting what he thinks makes an approachable and delicious menu: flavorful ingredients executed professionally. At Sycamore, Buttonwood and Little Big Diner, Dave believes in food that simply put...makes you happy.
